Vegan Chocolate Chip Cookies!!

Hey guys! Lately I've been craving an easy and totally delish recipe for chocolate chip cookies. Ever since going vegan it's all I've wanted. We've got a store here in RVA called Ellwood Thompson's that sells them, and let me tell you they are to DIE for. But I can't spend $3 per cookie when all I wanna do is eat an entire batch plus left over dough... SO I did my hunting and found the PERFECT recipe! hope y'all enjoy! Let me know what you think if you try these :)

2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon fine salt
1 1/4 cups dark chocolate chips (make sure they're vegan!!)
1/2 cup sugar
1/2 cup packed light or dark brown sugar
1/2 cup plus 1 tablespoon canola, grapeseed, or any other neutral oil
1/4 cup plus 1 tablespoon water
Coarse-grained sea salt or flaky sea salt like Maldon, for garnish
Preheat the oven to 350° F

In a large bowl, whisk together flour, baking powder, baking soda, and salt. Add the chocolate chips to the flour mixture and toss to coat.

In a separate large bowl, whisk the sugars briskly with the canola oil and water until smooth and incorporated, about 2 minutes. Note: Use fresh, soft light brown sugar. If there are clumps, break them up with the back of a spoon or your hand before whisking.

Add the flour mixture to the sugar mixture, and then stir with a wooden spoon or a rubber spatula until just combined and no flour is visible. Do not overmix.
Cover with plastic wrap. Refrigerate the dough for a few hours. Do not skip this step.

Line two rimmed sheet pans with parchment paper, I recommend freezing the balls of dough for 10 minutes before baking as the cookies will retain their shape better while baking.

Sprinkle the balls of dough with coarse-grained sea salt (if freezing, remove balls of dough from the freezer first), and bake for 12 to 13 minutes, or until the edges are just golden. Don't over bake!!

Good Morning beautifuls :) I hope you've had a good weekend so far. I have for sure, honestly though I am just so freaking sleep deprived... ugh I really need to catch up on sleep.... I will tonight, I promiseeeee... This afternoon we are headed down to our river house for some Easter weekend fun! Can't wait! The weather has been so nice out lately, I can't wait to see all the flowers in bloom down there, it'll be so beautiful! Eep!! I'm very excited! And maybe the Easter bunny will bring me some good vegan candies! (heart eyes heart eyes heart eyes!!)

Let's see, what else is new... Next next weekend I will be traveling up to DC for a SCAD accepted students day, which I am VERY excited about! Maybe I will find a cool roommate! Guys, finding a roommate is harder than I thought it would be. And stressful too! Ugh, man, it's a lot of work. I just want to end up with someone who isn't too messy, enjoys my weird sense of humor, likes sharing food and won't mind taking photos of me for my blog every once and a while ;) ! But in all seriousness... If you are reading this and are going to SCAD class of 2020, hmu pleaseeee. I know zero people. But hey maybe that is all part of the fun! Starting my own journy! woop woop!! :)

That's pretty much all for now, I need to find a job for the summer and would also like to start making more videos, thoughts? I love y'allx10000 thanks for existing. <3

Hello spring chickens! That's a thing right? Spring chickens? It is now... Anyway, HOW ARE Y'ALL?! I miss you guys, I miss blogging, but HERE I AM! And it's a long weekend and SOOO beautiful out! Which means hella posting! Woohoo!! Let me tell you though, this little photoshoot was quite the process... Ally and I would get to a spot, realize my camera wasn't working, go get her camera, go back to the spot, see that there was no camera in the card, go get a card, get back to the spot again, see that the photos are coming out dark and grainy, get frusterated, struggle, struggle, struggleeeee... BUT THEN at LAST! We found this place, picked some of the beautiful tulips in the area and shot these lil babies! I'm quite proud, I love how they turned out! Thank you Ally Go for being the best photog around ;)

I knew I wanted to pose with flowers for this shot so I went for a simpler look. It's nothing too unique, I mean you've seen it all before, the bell bottoms and a square knot tied top with Forever 21 sunglasses... What else is new? Nothing. Literally nothing. But hey, why change the old if it's already so dang good? What's your go-to spring look?

First Day of Spring

Happy not only first day of Spring but also NATIONAL HAPPINESS DAY!!! What a time to be alive! If I told you everything that is making me happy these days this post would be six pages long. I'm serious, everything is just so dang good! To give you a little hint of what's good, just tomorrow after school, I'm getting a mani and a pedi, and Ally and I are seeing Mutemath in concert (!!!), I can't wait!

In other news, what are your thoughts on this co-ord set I'm wearing? Because I bought this skirt a long time ago from Goodwill but it was SO awkwardly long and just blah the last time I wore it some guy asked me if I got "skirted" which is basically what happens when girls at my school wear too short skirts or shorts, they're forced to wear ugly long skirts... yeah, I wasn't too happy about it. BUT I snipped and hemmed here and there and made it into a two piece set! Booya!! I dig it a whole lot more now.

Also, I've been thinking about getting a hair cut, something similar to this. But I need to let my bangs grow out so I can cut it and have everything be the same length, ya feel? Thoughts? And I know you're going to be like "Olivia, your hair has looked like that before come on this is nothing new." But like, a hair cut is a haircut and those are always fun and new so be excited, okay? What's new for you?!

Hey kiddos! Last night was a very exciting night, why? WELLLLLLL, for starters I got to see Ally after almost two weeks of separation, and let me tell you my separation anxiety was for sure getting to me. What the heck am I going to do next year?! Secondly, I've ALWAYS wanted to take photos in a laundromat and I FINALLY did! Ally and I spent such a long time hunting for the perfect one. There was a cuter little one with blue walls that unfortunately was closing down as we were rolling up, so we settled for this one that although, was occupied by fellow launderers, was great. At first it was super awkward because this couple was just laughing at me as I climbed around and acted like a total goof, but once they left we got down to business and got some really cool shots! Shout out to A-Pop for being the best photographer ever! :)

And thirdly! If you hadn't noticed, I bought my own domain!! So goodbye and HELLOOOOO!! I feel sooooo professional now :))) What's good in your world?

Hello Hello! Apparently while I was gone I missed the best weather RVA has ever had, I mean I'm not complaining because I was in paradise, but now we are at the end of the good stuff. Basically its humid and rainy, BUT! Still warm! Spring is hereeeeee! At last!! And although I love love LOVED Vieques, it's good to be home.

Katie gave me this shirt last week, it's super duper comfy and sooooo cute. I love this cut, but the straps won't go straight back unless adjusted :( ehh whatever it's too cute to have that bug me. And this skirt I got on mega mega sale at a store called Rosewood, it used to be long long long long but I cut it and now it's all cute and bubbly. Thanks Rosewood!

I go back to school on Tuesday, It's been two hundred years weeks since I've been and I'm not ready... erggggg.....

Let's Talk Wallpaper!

Good morning! As many of you may know if you've been reading here for a while, I'm moving this spring!! WOW! Come to think of it, our move out date is way sooner than I thought, I need to get started packing! Anyway, I was blog hopping, as usual, and came across a post on I Suwannee about wall paper and immediately fell in love with the idea of doing wallpaper on one of my walls in my new room! I know that I still want to do all the photo gallery walls like I have in my current room in my new room, just not as heavy. I want my room to feel fresh and open. It's much smaller than my room now so I want to keep things bright. Let me know what to think of these papers!!

Hello from Puerto Rico day three!! Sorry I didn't post last night, but honestly I was just WAAAAYYYY too tired. We've been busy man! But also yesterday was sort of a chill stormy quiet day, so I didn't really even have much to post. SO I've combined photos from yesterday AND today to give y'all a compilation of all the good Vieques stuff that's been going on lately.

Some highlights have definitely been the Bioluminescent Bay (which unfortunately none of my photos turned out for, so I have none) some amazing restaurants, and a whole lot of beaching. The thing with Vieques beaches is, is that they are all pretty much private. All of the beaches you have to drive to and then walk a little bit to, but that means they are totally secluded and quiet, which is AHHHMAZING for beaching. I mean, yes we have a beach in our backyard (featured above) but the current is too rough and it's sorta rocky, the other side of the island has better ones. And let me tell you they are BEAUTIFUL!

Anyway! Here are some pics that sum up these past few days :)
